Lentil soup, a real treat!

Less is more, I am sure you are familiar with this expression. The meaning of these words suit this soup perfectly.

The recipe was handed to me by a friend, who prepared this soup when we visited her. I fell in love right away. With the soup I mean, not with her….😉. (Well, maybe a bit for handing me this great recipe.) Anyway I only added black garlic and a chili pepper, because we love spicy.

Here is what you do:

You fry a large onion in a big pot, add two cloves of black garlic, a chopped chili pepper and some black pepper. When the onion is soft, add orange lentils (I used approx. 400 grams orange lentils and 150 grams of black beluga lentils. Use approx. 2/3 orange and 1/3 black lentils). Stir fry for 2 minutes or so and then add water (approx. 1,25 ltr. if you like your soup thick, add more to your liking), add 2 tsp of vegetable stock powder. Bring to boil, add some salt and the black lentils. Cook until the lentils are tender, the black ones stay firm, the orange ones will go soft. Add two teaspoons of tomato puree. Stir through, simmer 5 minutes more and that’s all there is to it.

Only a handful of ingredients at minimum cost, easy to prepare, extremely healthy and yet a mind-blowing good taste, what more can you possibly want? I mean really, if this soup does not convince you that plant based food is the best, then nothing will…
