Plantbased substitutes for eggs.

More and more people are getting interested in plantbased food. The use of plantbased milk instead of animal dairy increases and there are is a wide variety available in almost any store. The quality of plantbased cheese is getting better and better and there are plenty of meat-substities available ánd in development. Yesterdays news tells us that more than half of the Dutch people skip meat at least three times a week. That is excellent news!

But people ask me regularly how to replace eggs. For instance how do you bake a cake without eggs, how to make an omelet? Let me tell you how:

Let’s start with baking cakes. If you have a recipe where the use of eggs is required you can simply replace them with a mixture of chia-seed or broken flax-seed mixed with water or plantbased milk. For instance: 1 tbsp of broken flax-seed (or chia seed) mixed with 30 ml. water (or plantbased milk). Stir and set aside for 10 minutes until it forms a thick substance (like jelly). One tbsp. replaces one egg.

Next, how to bake an omelet? Well that is equally simpel actually. All you need is chickpea flour, baking powder, baking soda and Kala namak, an Indian black salt with the smell of sulfur which gives that egg-smell and taste. Kala namak is available in any health food store.

You mix the dry ingredients in a mixing bowl, stir in the liquid (water or plantbased milk) using a fork until you have a somewhat runny batter. And then you fry a good spoon of batter the same way you would bake pancakes. Sprinkle herbs, like chives (fresh or dried), thyme, oregano on top while the batter is still soft and turn around. The key is patience, you don’t want to rush it, it needs to be firm on the outside, soft but cooked on the inside.
