Eenvoudige linzen soep

weinig werk, fantastische smaak!

Ingrediënten:

  • 350 gram rode linzen
  • 100 grams black (Beluga) lentils
  • 1 grote ui (rood of wit)
  • 1 rode chilipeper gesneden en ontzaad
  • 1 1/2 tbsp tomato- or paprika paste
  • 2 (black) garlic cloves sliced
  • 2 ltr. vegetable stock (or water with vegetable powder)
  • zout en peper

Bereidingswijze:

Fry the sliced onion in a bit of plantbased oil in a large pan, add the garlic and chilipepper and strifry a couple of minutes on medium heat. Add the tomato- or paprika paste, stir in and fry for two minutes. Add the rinsed red lentils, stir and fry for two minutes and then add the vegetable stock. Bring to boil, lower the heat to medium/low, add the rinsed black lentils and let cook for 20 minutes or until red lentils are soft. The black lentils stay firm. Season with salt and pepper to taste.

Serveer met een snee geroosterd brood.
