Pearl couscous, fried chickpeas and kale

If you think this dish looks boring and dull I can understand where you are coming from, even though I think it looks rather a happy meal. However I can assure you it tasted spectacularly well!

On top of that it is easy to prepare (we like that too). Maybe the most difficult part is obtaining the pearl couscous, I found it after months of searching in a deli.

Other than pearl couscous this meal contains chickpeas, kale, red chili pepper, red onion and black garlic and this is how I prepared it:

I drained and rinsed the chickpeas (kept the moist to make merengue!), placed them on a baking sheet and seasoned them with harissa powder, smoked paprika, piment, cinnamon, caraway seed powder and a pinch of salt. Poured some olive oil over it and roasted them in the oven for 15 minutes at 180℃. In the meantime boiled the pearl couscous, chopped up a red chili pepper (deseeded),a large red onion and 2 cloves of black garlic. I fried them in coconut oil until golden brown, then added the kale and stir fried everything further. Added the roasted chickpeas , stirred well and added some spices to taste (by that I mean the spices I seasoned the chickpeas with). Drained the pearl couscous and mixed everything in a bowl.

All in all it takes no more than 30 minutes!

We topped it with a large spoon of humus with, not a necessity but absolutely worth the try (my husband and I both experience a serious “humus wave” at the moment). It was, yet again, a delightful meal!
