Example of a plantbased week menu

Many people are interested in plant based food. Many people would like to eat plant based food on a more regular base. But many people just don’t have a clue how to go about it and how to fill a whole week with nothing other than plant based food. So instead of sharing another recipe, this time I would like to share with you what our dinners of this past week looked like.

Saturday : Black rice, roasted pumkin and a orange-tahi dressing

Delicious!

Sunday: Eggplant rolls filled with walnut mixture, served with freekeh cooked in Turkish paprika paste.

Exquisite!

Monday: Oven roasted Brussels sprouts (purple, flower sprouts and regular) with garlic, lemon zest and thyme served with fries of Jerusalem artichoke.

Heavenly!

Tuesday: Yellow wholegrain basmati rice with vegetable curry.

SORRY. NO PICTURE Always a good idea!

Wednesday: Oven roasted spicy chili sweet potato fries and shallots, served with fried peppers, black beans, fresh cilantro and avocado slices.

Mexican fiësta!

Thursday: stir fried kale and sweet pointed pepper with quinoa.

A healthy all-time favorite!

Friday: Kasha (roasted buckwheat) with a mixture of caramelized onions, mushrooms and sticky dates.

Very fulfilling!

Some of these dishes I have not yet posted, I hope to do so in the future.

As for breakfast and lunch, I will write about that some other time as well.
