Roasted figs and tomato salad

Nothing beats a fully dressed salad when it is scorching hot outside. Come to think of it, nothing beats a salad, period!

With the littlest possible effort you get a smashingly delicious result. This salad does not take more than 10 minutes work, your oven does the rest.

Basically you quarter the fresh figs, place them in a baking tray with the cherry tomatoes, peeled shallots, fresh cut sage, basil and thyme. Sprinkle with sea salt, black pepper and some olive oil and roast them in a preheated oven (180 ℃) for about 20 minutes. In the meantime mix the fresh spinach

(I buy them pre-washed) with a dressing of fresh squeezed lemon juice, sea-salt, chiliflakes and olive oil. Place the roasted ingredients on top and get ready to enjoy!
