My son had a Caesar salad in a restaurant (no vegan options I am afraid). It was his first Caesar salad ever and he liked it, I am inclined to say of course! But my son is a vegan, well 80% of the time he is. I posted about him previously, he started changing his lifestyle towards a vegan one a couple of months ago. (see this post)
Anyway back to the salad. The challenge lies of course in the dressing and the chicken. How can you change those ingredients into plant based ones and still get that particular delicious Caesar salad flavor?
Well that proved to be rather simple actually and I am delighted to be able to share this lovely recipe with you. The preparation of the salad and dressing in itself do not take up much of your time. However you do need to prepare the tofu two hours in advance. This time is needed to press out as much moisture of the tofu as you can . In exchange for that time you get a lovely crispy result!

The dressing is really simple, you mix plain humus, spicy mustard, garlic, lemon juice, pepper, salt and olive oil and you get a creamy dressing full of flavor.
I am absolutely certain if you would give this salad to a non-vegan without telling , he would not be able to tell the difference.
For those of you who miss the croutons, I am sorry, we do not like croutons so I chose to leave them out.
