Plantbased Feta

Greek salad with feta “cheese”

Ingredients:

  • 1 tsp lactic acid powder
  • 200 gr organic firm tofu
  • 2 tbsp coconut oil
  • 3 tsp aple cider vinegar
  • 1 tsp Himalayan salt
  • 1/2 tsp Celtic salt
  • 1/2 tsp garlic powder
  • 1 tsp fresh lemon juice
  • 2 tsp Za’atar

Preparation:

Start with melting the coconut oil and grinding the coarse Himalayan salt into a fine powder (in a mortar).

Press out as much moisture as you can from the tofu. (Use paper towel and the heel of your hands)

Break the tofu into smaller pieces, place in a food processor together with all the other ingredients on the list. Process until everything is well incorporated. Transfer to a shallow dish and smooth out the cheese with a rubber spatula. Cover and place in the fridge for 24 hours.
