Truffle risotto with stuffed Portobello and green asparagus

Who would have thought you would be doing something involved with cooking?” was my husbands remark yesterday over dinner. Nothing could be more true! While the kids were growing up these past years, I started thinking about “my career” other than being a mother. Those thoughts went in the direction of interior decorating, restoring old furniture, knitting, crafts of any sort or going back to university. None of these thoughts however involved cooking, never! If someone would have suggested that I would have been laughing out loud.

But apparently the universe decided that cooking is the thing (at least for now) and so here I am, not only cooking the most incredible delicious food but also writing about it!

The reason for my husbands remark was this mindblowingly tasty food I prepared yesterday. It was truffle risotto with stuffed Portobello and green baby asparagus. The risotto was great (it was one of those easy cooking risotto’s, but not containing bad stuff like preservatives etc. and of course nutritional yeast instead of Parmesan) the asparagus were nice (just blanched them for 4 minutes, nothing more), but oh my word, the Portobello and its stuffing were amazing!!! It was a stuffing of red onions, garlic and dates, fried together and then I added some maple syrup and a splash of balsamic vinegar and let it caramelize. After that I stuffed the Portobello’s with the mixture and placed it in the oven for 10 minutes or so (until the Portobello’s got soft) at 180℃.

I was not too sure about this combination which I suddenly had thought up, but it turned out to be the best combination ever. The saltiness of the risotto and the sweetness of the Portobello combined like a match made in heaven!

My husband also commented yesterday, “it is really a shame that we are the only two people who get to enjoy this lovely food of yours…..”
