Greek choriatiki vegan style

The Dutch summer season is utterly disappointing. We suffer from a serious lack of warm sunny days. So I decided to create a little bit of summer myself. In the form of this lovely vegan stye Greek choriatiki. I replaced the feta with avocado, added also grilled bell peppers and some rocket lettuce. A simple dressing of balsamic vinegar, sea salt, black pepper and olive oil made it complete.

I served it with sweet potato from the oven seasoned with Rash el Hanout and cloves of garlic. It was delicious and made the sun come out, if only for a brief moment!
