Jerusalem artichoke fries with wasabi mayonaise, stirfried broccoli and mushrooms.

I am extremely pleased with this dish! Not only because it was delicious, but I think it looks great as well. Needless to say that it is also very healthy. And maybe the best thing yet, simple to prepare.

Just clean the Jerusalem artichokes and steam them until tender (about 15 minutes). Let cool a little and then chop them the size of fries. Blanch the broccoli for 5 minutes and let cool/dry for a bit. Chop up the mushrooms (any kind you like).

Fry the Jerusalem artichokes in a layer of vegetable oil. If you want to get them right, brown and crispy, you have to be patient. Go slow, it will take 10 minutes or so!

In the meantime fry the mushrooms and a chopped and deseeded chilipepper, when the mushrooms turn brown add the broccoli and stir fry some more. Sprinkle some sesame oil and a tsp of sesame seeds half way the process. In the end the tiniest splash of soy sauce and voilá.

The wasabi mayonaise is egg free and I found it in a reformative store!
