Spiced sweet potato and crispy tofu cubes

Besides being versatile and yummy, sweet potatoes are a great source of fibers, vitamins, minerals and anti-oxidants. They are highly nutritious and promote gut health. Since our health starts in our gut it is wise to eat sweet potato on a regular basis!

Tofu is made of soybean curds. It is a great source of protein, gluten free, contains no cholesterol and is low in calories. It is even believed to have a positive effect on menopause….You can buy either plain tofu or tofu with for instance basil, curcuma, smoked tofu etcetera. Just make sure you buy organic tofu (also available in your regular supermarket).
