30 minutes salad. Chard, baby kale leaves, roasted sweet potato with pomegranate seeds

Too warm today to spend much time in the kitchen?

Prepare yourself this easy salad of chard and baby kale with a dressing of fresh lime juice, olive oil and black pepper. Add sweet potato chunks roasted with a mixture of mustard-, caraway- and fennel seeds. (if you really do not feel like too much work, you can buy the potato chunks ready cut in the supermarket). Grind the seeds in a mortar, add olive oil, black peper and sea salt and sprinkle over the sweet potato chunks, place them in the oven at 200℃ for 25 minutes. Sprinkle some pomegranate seeds over it and voilà a nutritious healthy salad within 30 minutes. Enjoy!
