Cauliflower rice with fennelcrisps and beetroot in various ways. Full of colour, full of flavor!

I am extremely proud of the way this dish looks! It is my own recipe entirely and if I say so myself a splendid one. It is not difficult to make but it does require some time to prepare. The cooking of the beetroot alone takes an hour at least. But it was very well worth it.

There is a lot going on on this plate. This dish consist of curried cauliflower-rice with chilipepper roasted in the oven placed on top of slices of beetroot with a orange-thyme dressing, also roasted in the oven. Than there are crispy fennel strips, also roasted in the oven with nothing more than some sea salt, black pepper and olive oil. Then I crumbled a whole (cooked) beetroot together with roasted hazelnuts and fresh parsley in a foodprocessor and sprinkled that on top. Last but not least a mustard-orangejuice-olive oil dressing sprinkled over the whole platter et voilá, a great looking dish with great taste!
