
I am not what one would call a Pizzafan. Never have been and thought I never would be. But that has definitely changed. Because today I had the most delicious pizza ever! Not a regular pizza, but one with a crust made of pumpkin (and of course wheat and other plantbased necessities to make a pizza crust). I bumped into this product by accident when I was looking for something else in the cooling section of our supermarket. I checked the ingredients and they turned out to be suitable for vegans, so I decided to give it a try.
I thought instead of the usual tomato sauce and cheese topping to try something else. So I started with baking the crust in the oven first .

A lovely smell started spreading throughout my kitchen, while in the meantime I prepared a dressing for my rocketsalad topping. I mixed some walnut oil with a teaspoon of Isot pepper, smoked paprika, pommegranate molasses, a pinch of salt and a squeeze of lemon. Then I chopped up some cherry tomatoes. After 12 minuter the crust was done.

I placed the rocket salad in a bowl and tossed it with the dressing. I topped the crust with the salad, the cherry tomatoes and some dots of homemade vegan creamcheese and a handful chopped up walnuts. To give it that extra flavor I added a few striped of date syrup.
So within 15 minutes I created a heavenly and very satisfying lunch.
I am pretty sure this was not the only time that I had this pizza. I guess that means that as of today I am a Pizzafan!
